60ml Caorunn Gin
30ml Fresh lime juice
15ml Pasteurised egg white
10ml Sugar syrup
Top with *Apple cream soda*


Pour ingredients into shaker and dry shake ingredients (without ice) before adding ice and shaking again. Strain cocktail into a chilled collins glass and top with apple cream soda.

To make *Apple cream soda*
45ml Egg white
10 slices caramalized green and red apples (caramalise with butter and brown sugar)
350ml Pressed apple juice
9 drops Vanilla bitters
Seal siphon and charge
