A crisp and fresh drink with heavy notes of mulled apple. The sweetness of the gin is complimented by the sharpness of the cider vinegar. Ginger liqueur lifts this cocktail and adds an extra spiced element with the spiced syrup finishing the drink off, giving a nose of winter spice and is subtle on the palate. Devised by Mike McGinty at 99 Bar & Kitchen.


50ml Caorunn Gin
12.5ml ginger liqueur (I used Kings Ginger)
12.5ml pressed apple juice
20ml spiced apple syrup
10ml good apple cider vinegar


Shake well and serve in a long stemmed cocktail glass with an apple fan dusted in cinnamon
