50ml Caorunn Gin
20ml Apple Schnapps liqueur
25ml Freshly squeezed lemon juice
10ml Apple sugar syrup
20ml Pasteurised egg white
Mix ingredients in shaker with ice. Strain back into shaker and dry shake (without ice) then strain into a chilled coupe glass.
Sugar crust rim, lemon zest twist (discard) & dehydrated apple slice
