In less than 30 minutes you could be indulging in a cupcake bursting with sweet chunks of apple, luxurious caramel frosting and an aromatic kick of your favourite gin - how's that sound for a strictly adults only treat?

Gin and Apple Cupcakes Recipe (makes 12)


  • 3 eggs
  • 125ml sunflower oil
  • 125g light brown sugar
  • 110g plain flour
  • 1/2 tsp baking powder
  • Pinch of salt
  • 2 red apples, cored and cut into quarters
  • 4 tbsp Caorunn Gin
  • 1/2 tsp vanilla essence


  • 135g lightly salted butter
  • 280g icing sugar
  • 3 tbsp Carnation caramel


  1. Pre-heat the oven to 155C
  2. Grease a large muffin tin
  3. Whisk the eggs, sugar and oil in a large bowl
  4. Add the flour, baking powder and salt, and mix well together
  5. Add the gin and essence
  6. Grate the apples into the mixture
  7. Mix the batter again, but only lightly to combine everything
  8. Spoon the mixture into the muffin tin
  9. Bake for around 20-25 minutes, or until firm to the touch.
  10. Leave to cool for 10 minutes or so in the tin, then loosen round each muffin from the tin with a knife
  11. Pop onto a wire rack to cool
  12. To make the icing, soften the butter then whisk with an electric whisk until you have a creamy texture, pop half the icing sugar into the bowl and whisk again.
  13. Add the caramel, sift in the rest of the icing sugar and whisk until you have a smooth mixture
  14. Spoon the mixture into a piping bag with a star nozzle and swirl on top of each of your cupcakes
