In partnership with the team at Caorunn, David works closely with top bar chefs and mixologists to forage for unique species available in the UK and Europe, creating a series of unique Foraged Cocktails.
David Winnard’s background in wildlife started when he was just 5 years old. His Grandmother
encouraged him to forage for mushrooms, paying him for every species he found. These treasure hunts into the woodlands around his native Rochdale taught him about identification and foraging. Since then Dave went on to gain a First Class Honours Degree in wildlife photography before starting ‘Discover the Wild’. His aim was to share his passion for identifying species and help people forage for wild foods safely and in a sustainable fashion.
David has appeared on BBC TV’s ‘Autumnwatch’ as well as hosting monthly slots on BBC Radio’
‘Exploring Seasonal Foraging’. He writes articles for magazines including ‘Home Farmer’, ‘Lancashire
Walks & Wildlife’ and ‘Yorkshire Walks & Wildlife’, discussing what to forage and how to find it.
Over the years he has provided workshops and information for large organisations such as the
RSPB, Society of Biology, The Wildlife Trust as well as various local authorities. More recently, David has been working in partnership with the team here at Caorunn to bring his skills and expertise to the art of crafting world-class drinks.
